Departing

I'm feeling rather blue today. We are packing up and getting ready to leave. I have been living here in Joshua Tree for six months and I have grown to love this place. I have just begun to understand the desert and feel at home here and now I have to leave. Well, let's say I choose to leave, that's the plan. I have been in a constant state of transition for the past eight months and the thought of picking up and moving again has me feeling a bit anxious. I am excited for adventure and I know I will see some new places and return to familiar places too. It's all apart of the journey that I signed onto....one that has not disappointed me yet .I am grateful that I have such a small concern to complain about.....and really I'm not complaining so much as just wanting things to remain the same for just a little bit longer. The birds singing me awake in the morning and the stars shinning down on me at night.....ah well I know wherever I land there will be birds and stars to greet me.
So hopefully I will be blogging my way across the country and sharing the journey with you!

Joy the Baker Green Goddess Dressing



 I crave this dressing. I use to make it years ago from an old Adele Davis Cookbook, "Diet for a Small Planet" Back in the vegetarian days. This recipe sounds even better. I think I might add a little buttermilk and cut the mayo a tad. It is the very best summer salad dressing and delicious on sandwiches, grilled chicken,seafood and tomatoes. Make a big batch and keep it in the frig.


1 cup non-fat plain yogurt
1/2 cup mayonnaise (I used low fat olive oil mayo)
1 cup loosely packed spinach leaves
small handful fresh tarragon leaves (about 3 tablespoons)
small handful fresh basil leaves
1/3 cup loosely packed flat leaf parsley
1/4 cup diced scallions
2 tablespoons fresh mint leaves
1 small garlic clove
1 teaspoon red wine vinegar
1 teaspoon dijon mustard
2 tablespoons olive oil
1 tablespoon fresh lemon juice plus 1 teaspoon lemon zest
salt and pepper to taste
Combine all ingredients in the bowl of a food processor fit with a blade attachment.  There is no need to chop the spinach or herbs.  The food processor will do all the work for you.  Do be sure to slice the scallions.  Pulse all of the ingredients in the food processor until the begin to combine.  Pulse for 5 seconds at a time until all of the greens are minced and well incorporated into the dressing.  Taste.  Add salt and pepper as necessary.  Add a touch more olive oil or a bit of water to create a thinner consistency.
If you don’t have a food processor, this recipe will also work in a blender.  I chopped all of my herbs and greens before adding to the blender.  This helps ensure that all of the greens break down evenly.  Combine all ingredients and blend.  Add salt and pepper to taste.  Add water and olive oil to thin the consistency, if desired.
If you don’t have a food processor or a blender, this recipe can be made by hand… with just a little elbow grease.  Finely chop spinach, herbs, scallions and garlic.  Really mince them fine.  Whisk herbs together with the rest of the ingredients.  Really give it a good stirring with the whisk.  Add salt and pepper to taste and serve as a dip of as a salad dressing.
Dressing will last 3 to 4 days in an airtight container in the refrigerator.

White Rock Horse Rescue and Retirement, Inc. (7)

 I had the most wonderful day today at White Rock Horse rescue.I feel like a new person.It's been a very long time since I have been on a horse and I couldn't have found a better group of people to help  me rediscover my love for horses. Everyone was so patient and helpful including the sweet Appaloosa, Surprise, that I rode.
I can't say enough about what these folks do to help the horses and all those who come in contact with them. It is inspiring.
 Surprise is the horse I rode and Rudy is her little boyfriend that came everywhere we did!

Let's Go to San Diego!!

We took a spur of the moment trip to San Diego and boy was it ever worth it.What a beautiful place and a destination to put on your"must see before I die list!" Gorgeous beaches, beautiful flora and fauna, friendly people, amazing zoo,great food and too much to do in a short little trip.The highlight was seeing the masses of seals, all ages and sizes hanging out in the cove at La Jolla beach where we stayed.


There were many newly born pups and many pregnant moms. What a riot and somehow there was one who reminded me very much of my own rolly polly Sparky!
Of course we had to go to the zoo and that was an all day affair. We did the guided bus tour, the sky tram and hiked all over kingdom come to see Pandas, Hippos, Elephants and so much more. I couldn't take my eyes off of the flamingos and there were baby chicks and new life everywhere, Baby tigers(born on my birthday), baby elephants, baby zebras, and a pregnant panda. Life must be really good at the San Diego zoo!!
The beaches were beautiful, the softest whitest sand I've ever felt and I collected a mother load of tumbled sea rocks and stones. I am happy. I will be back!
